I don’t know what I’m doing

As a Junior, I obviously haven’t applied to any colleges yet so I don’t know much about how this works. I have multiple colleges I’m considering applying to, and I have good chances in them. If I get accepted into multiple, do I just pick one and essentially tell the others “Sorry going to a different one?”

Yeah, basically. Typically when you get accepted to a college, they tell you the steps to take in the acceptance letter to show that you chose their school. Which is typically putting a deposit down. You have until May 1st to make that decision.(May 1st is decision day for most colleges). You don't have to inform individual colleges that you aren't going to their schools.

So yes, you can only pick one college to go to, but there are multiple rounds. Early decision basically means you have to go to that college, so only do it if it's for one you want more than the others. Early application lets you know if you got in early but you don't have to go.
