Which project should I choose?

I'm planning on shadowing a pharmacist, and attending a volunteer program that introduces/educates students regarding healthcare issues in a particular country over a span of a week during my spring break. At the same time, I'm planning on taking part in a science related project, but I have a couple of choices: Biology Research Methods, Health Policy & Management advocacy (drafting), Analyzing Covid Diagnostics, and Molecule Development procedures. I'm planning on being involved at least 2/4 over time, but I want to focus on one of these for the break.

Which one would help my learning the most while correlating with the other activities? Eventually I want to apply for a research assistant position in a lab, so which one would be most beneficial?

Which one should I do? Any advice is much appreciated! Thank you!!
