I can only pick one of these classes for next years classes. Help?

It depends on your intended major. If you're going for something in the arts, public speaking seems like a good choice. If you're going for a STEM major, Pre Calc/Honors Calc would be the best choice. Anatomy and Physiology is a bad choice in the context of the list you've provided, even if you are planning to go to med school.

Anatomy and Physiology is an excellent choice for med school. I took the course my sophomore year and loved it!
Colleges usually look for a certain number of years of math, which you might not have fulfilled yet since you haven't taken calculus yet.
How do you know they have not completed math?
I said "might not" have. Med school is still far off in the future, so Anatomy & Physiology can be taken in college. However, students usually take calculus in their first semester in college. It'll be helpful to have some background in the class before going to college.
Well, I've taken Algebra 1 and 2, and Geometry. I wanted to take pre calc honors to make it look good on my transcript
