What are some prerequisities for applying to Neuroscience major at UT Austin?

Can someone with experience provide some insights on what should a typical high schooler profile look like to get into neuroscience in UT Austin? Target GPA / SAT scores, extra-curricular, etc.

I don't personally think there are any prerequisites, but there are certainly typically average ranges. Once you get into the university, choosing a major is your choice and I highly doubt that a university will reject you from taking a certain major because of a low score as long as you got in.

For this, I would typically look at Collegevine's Chancing. Here is the link to UT Austin Chancing tab: https://www.collegevine.com/schools/hub/all/d/university-of-texas-at-austin-ut-austin/chancing

It looks at the typical high school student with and without considering your demographic background. In my case, to be the "typical average accepted student" from my background, I would need a 3.85 GPA and a 1390 SAT. And the average in general would be a 3.80 GPA and a 1355 SAT.

Collegevine Chancing also looks into EC (extracurricular) from your background who has tried to enter university in general. It also looks at your coursework rigor from your background who has tried to enter university in general (I was surprised that 15 AP + 4 Honors was average for my background!). So make sure to set up your profile here accurately!
