I want to get into Georgia institute of Technology and want to know how many ap's it will take
Idk. As a rising junior, I'm planning to finish with 7 APs by the end of junior year. 1 in 9th, 2 in 10th, 4 in 11th. My goal is cram a bunch of APs during senior year to do 15+ (mainly for GPA, and to be considered "above average" in course rigor from my school), but realistically maybe 12.
Don't get your hopes too high on using APs for college credit though, some of my senpais (I'm not a weeb, I'm Japanese and I live in Japan, I think the English term for this would be upper class-men or something? Idk, I'm not very good at English.) tell me the classes in university are harder, especially in ivy league schools, so some schools may or may not accept it as credit.

Your third statement-ish question: "I want to get into Georgia institute of Technology and want to know how many ap's it will take", it depends on your high school. As far as I'm aware, all colleges want to see is you performing your best in the hardest rigor courses your school offers (so they may compare it to students who've entered from your school as reference).

My school doesn’t offer more than 2 AP classes, however they do offer a wide variety of college classes. Therefore I am able to earn my associates degree by the end of high school. At first I was worried I wasn’t gonna have enough AP classes to make it into my top schools, but now I feel reassured knowing that AP classes aren’t everything. What is important about AP classes, is getting a high number score. I would suggest not burning out on AP classes and stretching yourself thin. Instead, focus on two or three AP classes that fit your target major and excel in those. Wish you the best of luck!
