You can volunteer or ask for an internship at a local mental health center. You can also shadow a psychiatrist.

You could volunteer at a local retirement home, checking on the residents mental health and doing activities on self development with them. This could classify as a passion project as well if you are dedicated enough. You could start a podcast of some sorts discussing current issues as well and if you make profit out of it donating it to a charity that is about mental health or hosting an event of some sorts. That would help you in your application because it would show that you are dedicated to this subject. Hope this helps!

I am starting a passion project myself now. If you are dedicated enough you can achieve those things in time for early actions of you plan to apply for them
