Least popular AP classes: still worth taking?

I'm considering taking a couple of the lesser-known AP classes because I'm interested in the subjects. Does anyone else have experience with taking some of the least popular AP classes? Did you still find them helpful or valuable in your college admissions journey? Thanks in advance for your input!
