Do colleges care about the rigor of my course load?

Hey everyone! I'm a junior and I'm currently taking a mix of AP and Honors classes. I'm wondering if colleges care more about the rigor of my course load or my GPA? Should I take more challenging courses, even if it might lower my GPA? Any advice is appreciated!
