Yes, if you're looking to major in a STEM field, then your science coursework in high school is quite important. Admission officers from these programs will certainly take a closer look at your transcripts to see not only what science classes you've taken, but how well you've performed in them.

Advanced level courses like AP or IB classes in Biology, Chemistry, Physics etc., can be particularly beneficial—they demonstrate your commitment to rigorous academic work in the field of your intended major. Your success in them can be a good indication of your preparedness for college level STEM classes.

However, even if you're not looking to major in a STEM-related field, a well-rounded course load - which can include sciences - can signify to colleges that you're a well-rounded student capable of handling a wide array of topics, demonstrating academic curiosity and intellectual depth.
