Need Info on Less Demanding Courses at Monmouth University

Does anyone here ever take or know of any classes at Monmouth University that aren't too stressful? Just trying to work smart in my first year and maybe leave some room for extracurriculars without letting my GPA tank. Any advice on this? Plus points if there are some fun classes you'd recommend!
