Looking for Easy Class Suggestions at University of Florida

Hey all, I'm a high school junior planning to apply to University of Florida next year. I understand that a well balanced schedule implies a mix of challenging and easier classes. Could anyone share suggestions for easier classes at UF? Of course, I'm not expecting 'easy A's' but rather classes that won't be overly consuming and might provide a respite among more demanding coursework.
