The best way to show interest is to write your supplementary essays with enthusiasm and uniqueness to show your interest in the college. You can also visit the campus and follow them on social media. Don't write "I like X" in the supplemented essays if your interested college is Y. Oh, and also spend time on your supplementary essays so you can sound like you're genuinely interested in attending the school.
What @T said is true, but there are also colleges that track how many times you visit their website. So, I would advice that you did this too. Also, you can attend virtual info sessions if you want, this demonstrates interest too.
