Writing about olympiad in honors
So yesterday I won a state-level chemistry olympiad and will go to the national level, but I'm not sure whether it will be hosted before the regular decision deadline or after. So what should I write in honors about this olympiad if it takes place after the deadline? Thank you in advance:)

You should write just that. Write that you won a state-level chem olympiad. That alone will impress AOs. Good luck, hope this helps!
