Should I mention a club/campaign in my "why this college" essay if the club may no longer exist?

I'm writing my "Why NYU" essay and when reading the list of programs and whatnot I came across the Real Food Challenge campaign led by NYU Earth Matters, but all the info I can find on it is from 2017, and it seems like its no longer a thing. Should I still mention it?

I would recommend against. By applying to NYU, I am sure there are so many other reasons and/or programs you could choose to highlight as a reason you want to attend. However (big one), you may say that in your research of the school, you found NYU Earth Matters online, but it does not seem to exist any more. You could say that you want to re-boot that campaign at NYU. Of course, this depends on how many words you want to allot to one specific campaign.
