They said that since I started the application in time, I can apply by 7th Jan midnight if i wish to. My essay was ready so I can but I am wondering whether they are actually going to consider my application or they just want me to apply
I think that is just an automatic email I got one from Vassar, Wellesley, and Bates, all colleges I planned on applying too but realized they were not a good fit for me, so I removed them from my commonapp. I believe they would still consider your application but it is not anything special like you will 100% get in if you apply. So if you still want to apply, yay for have one extra day to do so, however if you removed the school because it was not a good fit or for whatever reason, don't apply. They probably just want you to apply to say they are a more competitive school, but that doesn't mean you won't get accepted. They just see you were interested and are giving you one last shot to apply.

hi @manaalt100, they send it as a marketing strategy, there is no reason to believe that they actually want you as a student!
This was most certainly a marketing letter which was sent to a large swath of potential applicants. NYU will stay true to its word, and admissions officers will genuinely review your application with the same treatment they give other RD applicants. The school simply wanted to convince more people to apply, most likely because COVID-19 has caused low yield-rates and a dip in applications.
Just do it! you got nothing to lose
