I have good grades and going to be a junior. Some of my ECs are a basketball league, 2 clubs, educational ministry, a blog, and an educational social media page (I don't know if that counts). I have like 25 volunteer hours and no work experience. I'm planning to volunteer more and maybe work but the coronavirus stopped that from happening. Some colleges I plan to apply to are UH, Baylor, etc. I don't know if I'll get accepted into those colleges with these ECs. What can I do to improve it during corona?

It sounds like you have plenty of extra curricular's already! Based on what I've learned, many colleges also like to see something that you are more passionate about. Whether that's basketball or your clubs, it's good to show that you are specifically more interested in that subject. It would probably be a good idea to focus on strengthening that particular activity during this time to showcase how you can still find ways to stay involved during a pandemic. You already have activities that can still be done in the time of corona like your blog and the educational social media page which is very good!!! You try to get deeper into this activities and try other other ones that can be done within your house. These new activities will depend on the major you wan to pursue but essentially, try to show self-drive and passion for what you like to do. As long as you show this, you're resume will keep growing!
So I assume UH is Houston.
Schools really don’t care about volunteering except if it is for an extended period of time or you found it or help lead it because anyone can volunteer but it’s the commiment that helps you in admissions.
For the ministry page incorporate that into your duties at the ministry. I am on student board of my youth group and I redid the entire website and if you did it on your own that’s innovateness which is really good.
As for the basketball league I don’t know how weighted it is but if you earned league awards that’s good. But if not it’s more level of commiment that would be evaluated.
As for the clubs how long have you been a memeber and do you hold any responsibility or what you have learned. Like for a club at my school that I did not enjoy super much I always volunteered to sell concessions at football games and instead of talking about the club I talk about what concessions helped me achieve.
So try to find more leadership opportunities and in general show commitment and not just I joined as that is too admissions people just for admissions boost so try doing something that you are super passionate about or to achieve some sort of distinction. I joined debate and have competed nationally though yours could be playing basketball. It is on average best if you have 1/2 of your commitments relate to your major even if the link is weak.
As a debator I learned to research issues and look from many prospectives teaching me problem solving. As aN engineering I wilol apply those lessons blah blah.
You have some pretty great extracurriculars already! One thing I've heard from college webinars is that they expect us to use our extra time during quarantined to do something. They want to see that we have not lost motivation and are still productive, so one thing my sister and I are doing is starting a business together! That could be something you could try if you are passionate about it/interested in that!
