Is it possible to go to elite schools if you have like a very low unweighted GPA (estimate 3.7), but have a good weighted of like 4.5? I want to know because I am curious how that will play out (also considering that there is minimal grade inflation).

An unweighted GPA is just a non-contextual measure of your grades whereas a weighted GPA is a measure of your success in rigorous coursework. Submit your weighted GPA on Common App and things will work out great.
Elite schools care more about how you are challenging yourself with high-level courses than seeing a 4.0 (unweighted) due to A's in regular classes. Even if you had a perfect weighted GPA (5.0), you would've needed other things like solid extracurriculars and essays to get into elite schools, so you should also work on those apart from academics.

I’ve always heard it the other way around, that As in less advanced courses often look better than Bs and Cs in Advanced Courses and to not take Advanced Courses unless you’re confident you can get As or you really want to because they relate to a field of study or whatnot. Doesn’t make a ton of sense to me, but my parents swear by it. Everyone I know says Colleges barely even look at weighted GPA
