When did I start this extracurricular?

Hello, I began an extracurricular this month. The summer of my sophomore year. However, in the common app, when should I put that I started it during my sophomore or junior year?

I would say junior because technically you are a rising junior currently.

Would it affect me if I say sophomore year? Because I began brainstorming the project since May!

I don't think it would affect you if you did say sophomore year. If you continue it all the way through senior year and end up writing it on your application, I think that admissions officers would care a lot more about what you did with the extracurricular, rather than when you started it. So I think it's whatever you prefer in the end to put.
