Am I competitive enough?

I have a 3.91 GPA with 22 college credits and an associate's degree in business at 17. I have taken 4 AP classes and will take 3 more in my senior year. My SAT score is low (1390) because I have a severe anxiety disorder and do not test well. My dream school is NYU (applying ED 1), and I know they like well-traveled students, which is perfect for me as I have studied abroad 3 times in Hawai'i, the Galapagos Islands, and Spain. What else should I do (besides writing good essays) to help bolster my application?

Hello! Your academics are really strong, but for example for extracurriculars you can compete in some business writing contests (usually they are national/international but arent as hard or tedious compared to research competitions, and if you take it seriously you can win because a lot of kids dont know how to write). This shows intellectual vitality and that's what I did and got in.

Your GPA and course rigor are great for NYU! Do you have any extracurriculars? Besides improving your SAT score (your chances would more so depend on your math/reading scores), that'd be the only other way to maximize your chances of admission.
