Beginner Piano (I need this class for Academic Honors Diploma. I’m considering switching it to take Quantitative Reasoning. Any thoughts?)

no clue how your schools system works, for some this is way too little and for others its abt average. It's all tailored to how your school is, how many courses you can take per year, and the level of difficulty of the courses they offer. If these were the hardest classes you can take, then yes. If you want to part with the academic honors diploma go for it, personally I don't think its worth it. Colleges like variation within your schedule and taking an arts is a plus.

Also, don't look to just your schedule for ivies, but also extracirriculars. try to get involved and gain leadership in something, get into the community, and try to make an impact somewhere that is sort of tailored to ur major.
