When writing my CommonApp essay, I want to include how a summer program at a university has impacted me. Should I include the university's name in the essay or keep it vague (and how to do so)?

The summer program will be listed in your extracurriculars section, so mentioning the name of the university should be fine. Just don't focus on the program or university itself because this essay will be seen by all colleges. It should be about the impact it had on you and that can lead into your passion/vision/takeaways/etc.
