Since the Common App only offers so many activity slots, I have ran out of space. I have room for one more activity and I need to decide between Beta Club and playing guitar as a hobby. I would choose Beta Club but I have other academic clubs like National Honors Society, which is just a more prestigious Beta Club from what I have researched. The question really lies at: Do colleges value interesting activities such as guitar(which I've never won or achieved any type of award with), or another academic club to add onto the ones I already have?
I don't know if it helps, but the college I'm mostly concerned about is University of Georgia.
Hey there! It really depends on your responsibilities in these ECs. What did you do in Beta Club? Did you put on community events or initiatives? Did you have a leadership role? Guitar is certainly a more "fun" EC, but if don't have much to quantify your accomplishments, it may not be as impressive as Beta Club.
Also, ask yourself which one is more important to you, which one you spent more time on, and which one taught you more. I hesitate to have you put down guitar over Beta Club because it's a solitary activity that doesn't say much about how you'll interact with others on-campus - unless you had a band, or participated in a talent show, or made YouTube videos, etc. Does that make sense?
Another thing to keep in mind is the narrative you want to tell with your application. Do you want to show your leadership? Your affinity for music? Which activity supports this narrative? Which activity is more related to what you want to do in the future?
That's a lot of questions, but I hope they help! Let me know if you have more questions :)

I know this is a repost, but I got enough points to do an expert answer :P
