NYU's testing policy is really flexible. I am not sure if I should submit my AP exam scores: 5 on Macro, 5 on Stat, 5 on Lang, or my SAT which is a 1380 (on the lower side). I believe my extracurriculars and essays can make up for my lower SAT (relative to NYU's average stats, not in general). Please let me know. Thank you!

I think you definitely should submit your AP scores since they are all 5s.
I wouldn't submit the SAT composite since it is lower than the median of 1500 from last year.

So there isn't much published about what the exact range was but if I had to guess it was 1450-1560 for NYU last year which would make your 1380 about 70 points outside of the lower 25% percentile. And CV suggests that you should submit your score if it's within 60 points. I guess you could risk submitting it but since your APs and other factors are going to be great, mmm. why chance it.

According to NYU's website, the 25% percentile SAT score of accepted students is a 1350. While your score of a 1380 doesn't make you extremely competitive, it puts you clearly in range. At CV, we still recommend submitting your SAT score up to 60 points below the 25th percentile (1290 in this case), because not submitting, especially if you had the opportunity to take the test, can look bad and put a lot of pressure on the other elements of your application even with a test optional policy.
You should also submit your AP scores. Congratulations on your perfect scores!
